2 cucumbers, chopped
1 large tomato, chopped
2 tablespoons minced garlic
1/4-cup extra virgin olive oil
2 tablespoons sherry vinegar
1/2-teaspoon sea salt
1/2-cup organic seedless grapes
1 scoop Vital Scoop™
1 tablespoon toasted almonds, ground
1 teaspoon or to taste of ginger lemon concentrate*


  1. Chop vegetables and put into a food processor or powerful blender. Add garlic vinegar, sea salt, grapes, Vital Scoop and almonds and blend until smooth.
  2. Slowly add olive oil until emulsified. Taste, adjust seasonings and add ginger lemon concentrate if desired.
