2 cucumbers, chopped
1 large tomato, chopped
2 tablespoons minced garlic
1/4-cup extra virgin olive oil
2 tablespoons sherry vinegar
1/2-teaspoon sea salt
1/2-cup organic seedless grapes
1 scoop Vital Scoop™
1 tablespoon toasted almonds, ground
1 teaspoon or to taste of ginger lemon concentrate*
Directions
- Chop vegetables and put into a food processor or powerful blender. Add garlic vinegar, sea salt, grapes, Vital Scoop and almonds and blend until smooth.
- Slowly add olive oil until emulsified. Taste, adjust seasonings and add ginger lemon concentrate if desired.
